Stuffed Peppers

  • 3 Red, Yellow, Green or Orange Peppers
  • 1 pound ground beef
  • 1/2 cup onion diced
  • 2 cloves garlic minced
  • 3 Tbsp. Tomato paste
  • 1 14oz can of petite diced tomatoes
  • 1/2 cup cooked rice (per package directions)
  • 1 Tbs. Olive oil
  • Salt and Pepper to taste
  • Mozzarella Cheese (optional)


  • Preheat Oven to 400F
  • Brown Ground beef over medium high heat, drain fat
  • Cut the peppers in 1/2 and remove any seeds, stems etc..
  • Oil or use cooking spray in a small baking dish, add the peppers, cover with tin foil and bake 15 mins
  • Add onions to the beef mixture in a pan, and cook until translucent
  • Add tomato paste and stir to combine
  • Add tomatoes, garlic and cook 5 mins
  • Remove from heat, and stir in the rice
  • Add Salt and Pepper to taste. The rice and beef need plenty of salt.
  • Combine beef, rice and stuff into each pepper
