Chicken Cuban Fricassee
Very easy to make, very healthy and inexpensive too. My mother in law made the best chicken fricassee for years, and it would take her most of the day to do it.
I learned of this dish from my Father in law, who was born and raised in Cuba. It was a tradition to have this with black beans and rice, and plantains every Christmas eve.
This is an excellent version of Chicken Chili. I have been asked for this recipe every time I serve it or have somebody try it. It's healthy, and has a ton of FLAVOR. I hope you like it.
Chicken Tortilla Soup
This is really good soup, and full of flavor, also very healthy. I like to fry my own corn tortillas and top off the soup for added texture and flavor

I had a similar dish at Latin Porch in Smyrna and decided to try to create it for my Thanksgiving dinner. You can use canned or frozen core, whatever you have will do.
Ropa Vieja - Pork Style
I love the flavors of Ropa Vieja and so does Deb, but she does not like the stringy, tough texture of flank steak. So, I tried this using the traditional flavors, but with pork.
I have no idea where we came up with this dish or how we named it. However, the kids loved these growing up and it's a great way to use leftover ground taco meat. Very easy to do, difficult to screw up.
I was watching the Kitchen and saw an interesting idea on making Tortilla Pizza. The great thing about this, is you can utilize any flavor combination you see fit.
Arroz con Pollo +
I have been making this dish for 25+ years, taught to me by my Cuban Father-in-law. I usually make a large paella pan of this, but today I'm going to cut my original recipe by 1/3 and see how it goes.
This is a simple go-to chili. Easy to make and full of flavor. I try to make it similar to the tastes of texas red, but my wife insists on beans, so I add them. Hope you enjoy it.
